Chicken Biryani in Bombay style

Number of servings : 10 persons

Ingredients :

Chicken : 1.5 kg 
Oil / Ghee : 400 g
Onion Chopped Fine : 300 g
Tomatoes Chopped Fine : 200 g 
Ginger Chopped Fine : 2 Tbsp
Green Chillies ( slit in two ) : 8-10
Yougurt : 400 g
Basmati rice : 950 g 
Salt as required

Spices : ( take as per quantity and taste you want )

Red chili
Turmeric
Cinnamon
Black pepper
Coriander
Mint leaves
Cardamom
Dried Garlic
Star aniseed 
Saffron
Bay leaves
Nut meg
Cloves
Black Cumin & White Cumin

METHOD :

1. Take Basmati rice in a vessel, wash it twice and keep it soaked in water for 2 hours ( you can also cook it in rice cooker till rice is cooked well 80% and drain out water ).

Set aside.

2. Fry onions in oil/ghee till golden brown.

3. Add chicken ( boiled ), Chopped ginger, tomatoes, yogurt, and all spices.

Fry for about 15 minutes 

4. Add 2-3 cups of water and cook on low heat until chicken is tendered ( if required only ).

5. When oil/ghee separates from gravy, add slitted green Chilies and cook for another 5-6 minutes.

6. Set soaked rice/cooked rice and chicken curry in alternative layers in a bigger size cooking pan or a rice cooker. Cover the lid tightly and cook on low heat for 10 minutes, thn simmer it for another 10 minutes, till you smell an excellent Biryani fragrance.

Your delicious Biryani is ready to eat, enjoy it with raita, green chutney or dahi chutney.
