14 Authentic Kashmiri Food Everyone Must Try At Least Once in Life


KASHMIRI FAMOUS CUISINE

Tabak Maaz Recipe :

Number of servings : 10

Ingredients :

Lamb ribs : 2 kgs
Water : 10 litres
Milk : 2 cups
Pure Ghee : 800 grams
Dried ginger powder : 3 Tsp
Powdered cinnamon : 3 Tsp
Clove : 10 
Powdered turmeric : 3 Tsp
Powdered aniseed : 3 Tsp
2 pinch asafoetida
Salt as required

METHOD : 

1. Take a chopping board or log, cut the lamb ribs into rectangular pieces ( Do not remove the muscles which are covering the ribs, Keep in mind that each rib contains 2-3 pieces of rib bone in the meat ).

Now, 
2. Take a vessel, keep it on medium flame and add water along with milk in the vessel.

3. Let the mixture of milk and water heat up a little then stir in aniseed, ginger, turmeric, asafoetida, cinnamon powder, cloves and salt to taste. 

After stirring the mixture properly,
4. Add rib pieces and bring the mixture to a boil.

Wait till the meat becomes tender and the water is absorbed.

Transfer the pieces to a bowl and keep aside. 

5. Take a deep bottomed pan, keep it on medium heat and add Ghee ( you can use oil as well ) to the pan. Deep fry these pieces in the pan from both the sides and fry till they turn crispy  and reddish brown all over.

Drain out the ghee before serving.

SERVE HOT 

Note : For making this lip smacking recipe, take ghee instead of oil
