Egg Fried Rice

Number of servings : 4-5 persons
Ingredients :
To cook the Rice :
Basmati Rice : 1 Cup
Water
Salt : 1 Tsp
To make scrambled eggs :
Egg : 4 Nos
Oil : 3 Tsp
Sprinkle Salt
Pepper
To make egg fried Rice :
Oil : 2 Tbsp
Chopped Garlic
Chopped Ginger
Onion : 1 No. Finely Chopped
Red Chili : 1 No. Finely Chopped (Optional)
Green Chili : 1 No. Finely Chopped
Capsicum : 1 No. Finely Chopped
Salt : 1/2 Tsp
Pepper
Soy Sauce : 2 Tsp
Spring Onion : A Few Thinly Sliced
Scrambled Eggs
Cooked Basmati Rice
Chopped Spring Onion Greens
METHOD :
1. Heat some water for cooking the rice, Add salt and basmati rice. Cook the rice till they are fully done. Strain the rice and keep it aside.
2. Heat a pan with some oil, crack open the eggs into the pan, Sprinkle salt and pepper. Scramble the eggs and cook till they are fully done but a little soft and keep them aside.
3. Heat a pan with some oil, add garlic, ginger, onions, red chilies, green chili and saute. Add capsicum and stir fry. Add salt, pepper, soy sauce, spring onions and mix well.
4. Add the scrambled eggs and mix well.
Add the cooked rice and mix well with the eggs.
Finally garnish with some spring onion greens and serve the Egg Fried Rice
